Almond processing obviously relates to products’ destination and use required by food and confectionery industries. Natural or blanched, but also roasted or marzipan, we carry out many stages for different purposes. In this article, we will provide an overview about our almond products.

NATURAL ALMOND PROCESSING

All our almond processing stages preserve almonds’ nutritional characteristics and organoleptic properties. We personally select the best natural almonds from prumus dulcis trees, and sell them abroad in different varieties:

  • Whole natural almonds with skin
  • Whole natural blanched almonds
  • Sliced almonds
  • Diced almonds
  • Almond flour / meal

The first stage starts with quality controls: almonds are controlled by our state-of-the-art chromatic machinery, metal detectors, and X-rays to eliminate all kinds of foreign matter.

Then, they are ready to undergo the following stages.

Whole almonds are cut with our mechanical sieves, according to the sizes requested by our customers.

Sliced almonds, on the other hand, are first softned through natural processes, and then sliced by specific slicing machines.

Diced almonds and almond flour are sifted through toothed steel rollers. Their sizes and granulometry parameters relate to customers’ needs and requests.

As a result of the almond processing stages, we obtain a final product which is perfect to become a basic ingredient of different gastronomic recipe. We have the right almond for any kind of preparation.

BLANCHED ALMONDS

Blanched almonds are raw natural almonds without their skin. We remove it through natural processes with our food-grade rubber rollers. We offer a wide range of blanched processed almonds:

  • Whole blanched almonds
  • Sliced almonds
  • Split almonds
  • Almond flakes
  • Slivered almonds
  • Diced almonds
  • Almond Flour / Meal

Each of these products requires different and customized processing techniques, relating to their destination and use. We carry out almond processing with high-tech systems and machinery.

We guarantee quality controls in each stage, from the very beginning of production line. Our state-of-the-art sorting machines identify and isolate any foreign matter and non-compliant almonds, so that only the best ones will move on to the next stages.

In the end, each almond is cut, split, slivered, diced or turns into flakes, marzipan or flour. Basic ingredients of many food products, such as desserts, energy bars, muesli, yogurt, ice creams or even first and second courses.

ROASTED ALMONDS

Roasted almond processing is carried out with the help of cutting-edge technologies, such as our four-stage roasting oven. Here, almonds are preheated, roasted and then cooled to ensure a homogeneous final result. After being sliced or sieved, our almonds undergo roasting processes.

FROM ALMONDS TO MARZIPAN

Marzipan is one our best products that comes from our almond processing stages. It is obtained by mixing sweet and bitter blanched almonds, sugar and water in variable proportions. A simple tasty recipe with the most authentic almonds.

Marzipan mixture is firstly refined and then cooked at 100 °C to stabilize the product. The result is a compact and soft mass, which is cooled and then packaged in blocks.

It is used to garnish desserts, as a base ingredient or filling for confectionery and baked goods. But it is also ideal to coat cakes and ice creams.

A TAYLOR-MADE ALMOND PROCESSING

We are also able to customize the processing stages to adjust our almonds’ size by millimeter for our customers’ demands.
